Hello world, we have a brand new coffee for ya. Get ready, CUZ WE’RE GOIN’ TO BRAZIL. This coffee hails from a farm named Sitio Bela Vista, near the city of Castelo in the southeastern state of Espírito Santo. As is so often the case, Sitio Bela Vista is a family affair. José Debona Romão is a 2nd generation coffee farmer who inherited this land 30 years ago from his father. These days his family (wife Cirlene + sons José Vitor & José Guilherme) are integral members of the farm operation. Romão grows 100% Catucái 785 variety coffee. The Romãos are driven to produce quality coffee: they care about the ecosystem, take time to only harvest ripe coffee fruit, & are meticulous with processing the coffee. This lot is a “pulped natural” processed coffee. It’s similar to a honey process, except that even more mucilage is removed from the seed. From here, the seeds are initially dried on concrete patios, moved often to ensure even drying, & finished on raised screens until shelf stable. The finished product is both sweet & delicate.
