Buds, we've arrived at our 1st Honduran feature of the year; beginning with one that so clearly expresses why we love the coffee from this region: it's sweet, fruity, & dynamic. To boot, it's from a favorite farmer of ours. Let's dig into the details! Founded in 2008, Los Tucanes sits at an altitude of 1500 meters above sea level. Generally speaking, the higher a coffee grows, the denser the seed gets, & the more sugar it has to caramelize during a roast, which is ideal. But sometimes high altitudes can be challenging in humid places like Honduras: moisture can create freezing conditions overnight. So it's all the more impressive when a producer like Genaro can walk that fine line & come out the other end so successfully. Beyond that he processes coffees like a champ! This coffee (IH90 & Pacas varieties) spent 15 hrs fermenting before being washed of fruit fibers, yielding coffee that is sweet as heck with a lot of razzle dazzle too! We're grateful to roast coffee like this. It clearly only happens with careful & dedicated work from farmers like Genaro. Thanks Genaro! And cheers, buds :)
