Ok watch out: here comes fun coffee. So fun we’re resurrecting the FLOWERS moniker. FLOWERS is a name reserved for especially floral coffees. This coffee is especially floral. How? Why? Let’s talk about it: El Diviso is run by Nestor Lasso & his family in Pitalito. Lasso grows quite a few varieties of coffee. This one is Pink Bourbon, a uniquely plush & floral variety. Once coffee cherries turn perfectly ripe, they’re harvested by hand, & placed in tanks of water to sort out less dense coffee. Dense coffee sinks to the bottom of tanks & indicates proper seed development. From here, cherries were sterilized, fermented whole for 24hrs, depulped, & fermented again in a sealed environment free of oxygen for 36-48 hrs. THEN he finished the seeds off by raising the temp in the chamber a little, theoretically opening the seed’s pores to take in some fruit essence, quickly cooled it down (locking it in), washed the coffee seeds off, & slowly dried them in even layers on raised screens (promoting even air circulation) in a controlled, semi-indoor environment. The idea here is to carefully reduce the coffee’s moisture level so that it becomes shelf stable yet not get so dry that it tastes like wood. In doing so, Lasso crafted a coffee that is uniquely & boldly aromatic with a bouquet featuring so many exciting floral notes we love about coffee, plus a few more.<3 btc
