GROWN IN THE TOWN OF CORQUÍN, AT 1450 MASL, THIS COFFEE IS A HEALTHY MIX OF IH90 + CATURRA VARIETIES.


WHAT’S ALL THIS HONEY BUSINESS ABOUT? IN ORDER TO STABLY SHIP COFFEE, THE FRUIT NEEDS TO BE REMOVED FROM THE SEED WE ROAST. THERE ARE MANY WAYS TO DO IT. ONE INVOLVES LEAVING COFFEE TO DRY IN THE SUN LIKE A RAISIN (IMPARTING BIG SUGARY FRUIT TONES BUT OFTEN TIMES INCONSISTENT FROM DRINK TO DRINK). THE OTHER- REMOVING THE SKIN, FERMENTING AND WASHING THE SEEDS, RESULTING IN A MUCH MORE NUANCED AND CONSISTENT CUP OF COFFEE.
